Cocoa & Spice rubbed ribs with BBQ sauce

Ingredients

  • 1 kg smoked spare ribs
  • 3 Tbsp cocoa powder, for dusting
  • 3 tsp smoked paprika
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 4 Tbsp sugar for the egg whites
  • 1/4 tsp salt
  • BBQ sauce, to serve (I used WW texas style BBQ dipping sauce)

Cooking Instructions

  1. Prepare your braai by lighting the fire and allowing the coals to burn down until you are left with coals that are hot (you shouldn't be able to hold your hand over the grid for more then a few seconds).
  2. Combine all the spices in a bowl then rub the ribs liberally until well coated in the spice rub.
  3. Place the ribs on the fire and braai until the spices have darkened and the ribs are giving off a delicious aroma. Because the ribs are already cooked, you don't have to worry about cooking them, you just want the spices to cook through and the ribs to be heated through.
  4. At this point you can also baste the ribs with the BBQ sauce if you prefer.
  5. When the ribs are cooked, slice and serve with BBQ sauce and coleslaw.
