Watermelon and lemon sorbet stack

Ingredients
- 1 tub lemon sorbet
- tequila, to drizzle
- 2 x 80 g punnet pomegranate rubies
- 8 slices watermelon, seedless

Cooking Instructions
- Cut out 4 large rounds from 4 slices of watermelon. With the other 4 slices, cut out 4 medium-sized rounds and 4 small rounds.
- Pile up the watermelon discs, with lemon sorbet in between, and scatter over the pomegranate rubies. Drizzle with tequila.
