The ultimate tiramisu

Prep Time:25 minutes, plus 4–6 hours’ chilling time

Ingredients

  • 3 Free-range eggs, beaten
  • 75 g Castor sugar
  • A few drops vanilla extract
  • 600 ml mascarpone, at room temperature
  • 1x 200 g packet Boudoir biscuits
  • 1/2 cup strong black coffee
  • 45 ml cocoa powder

Cooking Instructions

  1. Whisk the egg yolks with the caster sugar and vanilla until pale and fluffy and almost doubled in size.
  2. Whisk in the mascarpone, a little at a time, until smooth.
  3. Whisk the the egg whites until stiff peaks form, then fold into the egg yolk mixture.
  4. Dip a few finger biscuits into the coffee for about 5 seconds, then arrange in the bottom of four wide glasses or a large bowl.
  5. Spoon over the Marsala, if using.
  6. Top with a layer of the mascarpone mixture, then add more biscuits and Marsala.
  7. Repeat the layers until the glasses or bowl are full, ending with mascarpone.
  8. Smooth and dust with cocoa powder. Chill for 4–6 hours before serving.
