No-bake cheesecake cookie sarmies
Ingredients
- 375 g Woolworths Full Fat Cream Cheese
- 60 g icing sugar
- 1 t vanilla paste
- 6–7 T double cream
- 200 g strawberries
- 2 T castor sugar
- Juice of one lemon
- Woolworths Homestyle Oat Snaps, to serve
- 1-2 t cocoa powder
- Chocolate digestives, to serve
- 1-2 T lemon curd
- Ginger biscuits, to serve

Cooking Instructions
Whisk the cream cheese until smooth. Fold in the icing sugar and vanilla paste before adding the double cream. Whisk until smooth and it holds its shape. Divide between 3 bowls.
- Strawberry cheesecake: Simmer 200 g sliced strawberries with the juice of a lemon, 2 T castor sugar and splash of water for a few minutes until sticky and syrupy. Allow allow to cool completely before folding through the cheesecake frosting. Sandwich between Woolworths Homestyle Oat Snaps.
- Chocolate cheesecake cookies: Stir a teaspoon of cocoa powder through the sweetened and whipped cream cheese and sandwich between Woolworths Chocolate Digestive Biscuits.
- Lemon cheesecake cookies: Stir a spoon or two of Woolworths Lemon Curd through the whipped cream cheese and sandwich between Woolworths Ginger Biscuits. Enjoy!
