Lemon-and-rose cake

Ingredients

  • 2 boxes Gluten Free Vanilla Cake
  • zest of half a lemon
  • full fat cream cheese
  • pink food colouring
  • chopped pistachios
  • Turkish delight
  • edible flowers

Cooking Instructions

  1. Prepare 2 Woolworths gluten-free vanilla cakes according to package instructions. Use one box per cake tin and add the zest of 1/2 lemon to each batch before baking.
  2. To make the icing, beat 500 g full-cream cream cheese. Gradually add 50 g sifted icing sugar, 2 t rose-water, 1 t pink food colouring and the zest of 1 lemon.
  3. Once the cakes have cooled, decorate with the rose cream cheese icing.
  4. Top with chopped pistachios, Turkish delight and edible flowers.
