Cinnarusk bread and butter pudding

Ingredients

  • 1 tsp butter
  • 1 Granny Smith apple
  • 2 tbsp sugar
  • pinch ground cinnamon
  • 2 large free range eggs
  • 250 ml cream
  • 500ml 1,5 L milk
  • 1 packet cinnarusks

Cooking Instructions

  1. Preheat oven to 180 degrees
  2. Place the rusks in the oven proof dish side by side with the tops facing upwards so you see the bun pattern
  3. Cube the apple into bite size chunks
  4. Melt the butter in the pot
  5. Add a dash of ground cinnamon and fry
  6. Add the apple cubes and sauté until apple has caramelised a bit
  7. Remove the apple cubes and spoon into the any open grooves between the cinnarusk
  8. In the same pot place the milk and cream and bring to boil
  9. In the bowl whisk the eggs and sugar together
  10. Add ¼ milk and cream mixture to the bowl and mix well with the whisk
  11. Add the rest of milk and cream mixture
  12. Decant mix into a jug
  13. Pour half the mixture onto the rusks and allow to stand for 15 minutes
  14. Pour half of the remaining liquid mix and allow to stand for 5 minutes
  15. Pour the last of the remaining liquid and allow to stand for 5 minutes
  16. Place the dish in the oven and bake for 20-30 minutes at 180 degrees
  17. Allow to stand for 10 minutes and serve with custard/vanilla ice-cream
