Potatoes roasted in duck fat

Ingredients

  • 1 cup duck fat
  • 3 oranges
  • 7 tbsp maple syrup
  • 1/2 tsp ground nutmeg
  • 6 all spice berries
  • 6 sprigs oregano
  • 2 garlic cloves, crushed
  • Maldon sea salt
  • 6 potatoes

Cooking Instructions

  1. Add spices to pestle and mortar.
  2. Pound to make a powder.
  3. Sprinkle over parboiled potatoes.
  4. Spoon over duck fat.
  5. Toss to coat.
  6. Sprinkle garlic, zest and oregano over the potatoes.
  7. Roast for 45 minutes at 180°C until golden.
