Potatoes roasted in duck fat
Ingredients
- 1 cup duck fat
- 3 oranges
- 7 tbsp maple syrup
- 1/2 tsp ground nutmeg
- 6 all spice berries
- 6 sprigs oregano
- 2 garlic cloves, crushed
- Maldon sea salt
- 6 potatoes

Cooking Instructions
- Add spices to pestle and mortar.
- Pound to make a powder.
- Sprinkle over parboiled potatoes.
- Spoon over duck fat.
- Toss to coat.
- Sprinkle garlic, zest and oregano over the potatoes.
- Roast for 45 minutes at 180°C until golden.
