Garlic, thyme and roast potatoes sheets
Ingredients
- 1 Tbsp Anchovy oil
- a few sprigs fresh thyme
- 4 anchovies
- 2 kg potatoes
- Maldon sea salt
- freshly ground black pepper, to taste
- 4 Tbsp Butter
- 2 garlic cloves, peeled

Cooking Instructions
- Add garlic, anchovies, anchovy oil and butter to a pestle and mortar.
- Pound until smooth.
- Season.
- Cut potatoes into thin slices. Arrange on a tray
- Coat the slices of potato with the butter.
- Sprinkle with thyme.
- Roast at 180°C for 20 minutes until golden and crisp.
