Garlic, thyme and roast potatoes sheets

Ingredients

  • 1 Tbsp Anchovy oil
  • a few sprigs fresh thyme
  • 4 anchovies
  • 2 kg potatoes
  • Maldon sea salt
  • freshly ground black pepper, to taste
  • 4 Tbsp Butter
  • 2 garlic cloves, peeled

Cooking Instructions

  1. Add garlic, anchovies, anchovy oil and butter to a pestle and mortar.
  2. Pound until smooth.
  3. Season.
  4. Cut potatoes into thin slices. Arrange on a tray
  5. Coat the slices of potato with the butter.
  6. Sprinkle with thyme.
  7. Roast at 180°C for 20 minutes until golden and crisp.
