Flavourburst nectarine & roast chicken

Ingredients

  • 1 whole chicken
  • 300 g roughly chopped Flavourburst nectarines, pips removed
  • 1/2 cup verjuice
  • 75 ml honey
  • 2 Tbsp olive oil, to drizzle
  • a few sprigs fresh rosemary
  • 75 g salted butter, cut into cubes
  • 2 lemons, halved, plus the juice of 2 lemons

Cooking Instructions

1 Preheat oven to 180*c.
2 Place nectarines in a baking dish and cook until they are caramelized, about 10 minutes.
3 Remove from the oven and place in a bowl. Add verjuice, honey, olive oil and 1 Tablespoon of rosemary. Season and blend until smooth. Use this as basting sauce.
4 Mix butter with 2 Tablespoon of chopped rosemary and smear the outside of the chicken, including under the skin of the breast.
5 Squeeze lemons over the chicken and place the lemon halves inside the chicken’s cavity.
6 Roast chicken for about 50 minutes, basting every 10 minutes or so with the basting sauce until cooked and skin is caramelized.
