Easy To Cook Roast Chicken

Ingredients

  • 200 g Leftover easy to cook roast chicken (filled with sundried tomato and feta)
  • 400 g young stem broccoli, cooked
  • 1 small french loaf
  • 6 garlic cloves, finely chopped
  • 4 Tbsp Italian parsley, roughly chopped
  • 2 tbsp ricotta
  • 1/2 red chilli, finely chopped
  • olive oil, to drizzle
  • 1 lemon, cut into 8 slices
  • black pepper to taste

Cooking Instructions

Pre-heat the oven to 180°C.

Cook the chicken according to the packaging instructions.

Tear a small French loaf into chunks, arrange on a baking tray, drizzle with olive oil and toss with crushed garlic and chopped Italian parsley.

Toast for 5 - 10 minutes or until crisp and golden.

Cook 400g tender stem broccoli in boiling salted water for 3 minutes, then drain.

Toss broccoli with large chunks of ricotta, the croutons and 1 chopped red chilli. Drizzle over a mixture of olive oil and a squeeze of lemon juice.

Season with black pepper.
