Duck Fat Roasted Sweet Potatoes

Ingredients
- 6 medium sweet potatoes
- 1/2 cup duck fat
- maldon salt and pepper, to taste

Cooking Instructions
Wash sweet potato and cut into 3cm rounds.
Add the sweet potato to cold water and bring to the boil.
Boil for 12 mins and strain and shake the potatoes in the pan.
Make sure there is no excess water left.
Pre heat oven to 180ºC.
Place potatoes in oven, season with salt and pepper and add enough duck fat to coat the potatoes.
Roast for 40mins making sure you shake them every 10 mins.
Garnish with rosemary before serving.
