Smashed roast potatoes with sage

Ingredients

  • extra virgin olive oil, plus extra for drizzling
  • 1 1/2 cups Parmesan cheese
  • 2 Tbsp sage, chopped
  • 1 garlic cloves, crushed
  • 50 g butter
  • 2 tbsp sea salt flakes
  • 1 kg potatoes, peeled,quartered and parboiled

Cooking Instructions

  1. Rub potatoes with the salt.
  2. Bake at 200°C for 30 minutes.
  3. Squash the potatoes with the back of a spoon.
  4. Pour garlic and melted butter over the potatoes.
  5. Top with the sage.
  6. Grate cheese over the potatoes.
  7. Roast for a further 15 -20 minutes until golden.
