Smashed roast potatoes with sage
Ingredients
- extra virgin olive oil, plus extra for drizzling
- 1 1/2 cups Parmesan cheese
- 2 Tbsp sage, chopped
- 1 garlic cloves, crushed
- 50 g butter
- 2 tbsp sea salt flakes
- 1 kg potatoes, peeled,quartered and parboiled

Cooking Instructions
- Rub potatoes with the salt.
- Bake at 200°C for 30 minutes.
- Squash the potatoes with the back of a spoon.
- Pour garlic and melted butter over the potatoes.
- Top with the sage.
- Grate cheese over the potatoes.
- Roast for a further 15 -20 minutes until golden.
