Vine tomatoes with goat's milk cheese

Ingredients

  • 150g cherry tomatoes on the vine
  • 5 Tbsp olive oil
  • a pinch sea salt, plus extra to taste
  • 250g goat's milk cheese
  • fresh rocket leaves and drizzle of creamy walnut oil and whole-grain mustard dressing

Cooking Instructions

  1. Pre-heat the oven to 180°C.
  2. Arrange the cherry tomatoes on a baking tray, drizzle with olive oil and scatter with sea salt.
  3. Roast for 15 to 20 minutes, or until blistered.
  4. In the last 5 minutes of cooking time, add rounds of goat’s milk cheese and cook until slightly gooey.
  5. Serve warm with fresh rocket leaves and a drizzle of creamy walnut oil and whole-grain mustard dressing.
