Brown Sugar Flamed Pineapples

Ingredients
- 70 g pineapple, chopped
- 4-6 granadillas, sliced in half
- 250 g sabrosa strawberries, whole with stalks, leaves removed
- 100 g treacle or brown sugar

Cooking Instructions
- Carefully remove the insides of the pineapple in one piece by using a sharp paring knife.
- Remove insides and slice into wedges. Keep the half pineapple boats.
- Sprinkle pineapple boats, pineapple wedges and strawberries generously with sugar.
- Place a large pan on a hot fire and heat up until warm. Sear the pineapple boats, skin side showing up for a few seconds allowing the sugar to caramelise.
- Remove and do the same with pineapple wedges and strawberries. Add half the granadillas into the pan with skin on.
- Add a sliced red chilli if you like and add a splash of tequila.
- Serve pineapple boats filled with caramelised strawberries and pineapple. Drizzle with squeezed granadilla.
- Serve with fresh cream, creme fraiche or ice cream.
