Brown Sugar Flamed Pineapples

Ingredients

  • 70 g pineapple, chopped
  • 4-6 granadillas, sliced in half
  • 250 g sabrosa strawberries, whole with stalks, leaves removed
  • 100 g treacle or brown sugar

Cooking Instructions

  1. Carefully remove the insides of the pineapple in one piece by using a sharp paring knife. 
  2. Remove insides and slice into wedges. Keep the half pineapple boats. 
  3. Sprinkle pineapple boats, pineapple wedges and strawberries generously with sugar. 
  4. Place a large pan on a hot fire and heat up until warm. Sear the pineapple boats, skin side showing up for a few seconds allowing the sugar to caramelise. 
  5. Remove and do the same with pineapple wedges and strawberries. Add half the granadillas into the pan with skin on. 
  6. Add a sliced red chilli if you like and add a splash of tequila. 
  7. Serve pineapple boats filled with caramelised strawberries and pineapple. Drizzle with squeezed granadilla. 
  8. Serve with fresh cream, creme fraiche or ice cream.
