Spicy tomato meatballs

Ingredients
- 500g beef mince
- 1/2 tsp dried oregano
- 2 tsp fresh parsley,finely chopped
- 6 sprigs fresh thyme
- 1 egg, lightly beaten
- 1/2 cup medium red onions, thinly sliced
- 2 cloves garlic, finely sliced
- 1/2 tsp chilli flakes
- 3 tbsp smoked paprika
- 1 400g tin Italian chopped tomatoes
- 3 Tbsp tomato paste
- 1 large cauliflower florets
- 2 tbsp butter, softened
- 1/4 red onion, finely sliced
- 350 ml organic chicken stock
- salt and pepper to taste

Cooking Instructions
- For the meatballs, combine all the ingredients then mix well.
- Form golf-ball sized meatballs and fry in a large, hot frying pan until browned all over but still raw inside.
- Remove from the pan and set aside.
- To make the tomato sauce, fry the onion in a saucepan until soft and translucent then add the garlic, chilli flakes and paprika.
- Add the tomatoes then break up with a potato masher and add the tomato paste. Fill the tin the tomatoes came in half with water and add to the pot then add the xylitol.
- Lower the heat and allow to simmer for 10-15 minutes until reduced slightly.
- Season to taste then drop in the meatballs and allow to simmer gently for 10 minutes until the meatballs are cooked but still juicy.
- In the meantime, break the cauliflower heads up into florets and pulse in a food processor until finely chopped and resembling couscous.
- Heat a large frying pan over high heat then saute the onion in the butter/olive oil until soft. Add the cauliflower couscous and the stock then allow to simmer for 10-15 minutes until the cauliflower is cooked through but still keeping its shape.
- Season to taste then serve with the spicy tomato meatballs.
