Roast artichokes with truffle butter

Ingredients

  • 3 Tbsp Woolworths Giuliano Tartufi Truffle Cream
  • Lemons, for squeezing
  • salt to taste
  • 4 Tbsp butter, plus extra, melted, for the tart base
  • 100 ml cream
  • 4 artichokes

Cooking Instructions

  1. Preheat the oven to 180°C. Cut off the tips of the artichokes to create a flat surface, then remove the outer leaves. Place the artichokes in an ovenproof dish, cut side up.
  2. Mix the truffle cream and butter, then spoon 1 heaped T onto the top of each artichoke.
  3. Season with salt, then roast for 30 minutes or until the outsides of the artichokes have caramelised and the leaves pull away easily. Serve with lemon juice.
