Starry watermelon salsa salad

Refreshing watermelon salad with parsley, mint and red onion is a summer favourite but this version, which includes anchovies and capers, takes it to the next level. Cut the watermelon into stars for a festive twist.

Ingredients

  • 1 medium cubed watermelon
  • 4 tbls capers, roughly chopped
  • 2 lemon, zested, plus extra for squeezing
  • 10, roughly chopped anchovies
  • 6 garlic cloves, roughly chopped
  • 1/2 cup medium red onions, thinly sliced
  • a handful fresh mint leaves, finely chopped
  • 4 Tbsp Italian parsley, roughly chopped
  • 1 tsp red wine vinegar
  • pink peppercorns, to garnish
  • sea salt and freshly ground pepper, to taste
  • 50 g grated pecorino cheese, grated
  • 2/3 cup extra virgin olive oil, plus extra for drizzling

Cooking Instructions

  1. Cut the watermelon into thick slices, then cut out stars using a cookie cutter. 
  2. For the dressing, combine the capers, lemon, anchovies, garlic, red onion, mint, Italian parsley, red wine vinegar, peppercorns, pecorino and olive oil.
  3. Arrange on a large serving platter and drizzle with the dressing.
