Sloppy joes on crusty French rolls

Ingredients
- 1 tsp hot English mustard
- 4 crusty French bread rolls
- sea salt and freshly ground black pepper, for seasoning
- a pinch cayenne pepper
- 4 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 400 g tomato purée
- 1 1/2 cups organic tomato sauce
- 500 g free-range extra lean beef mince
- 2 garlic cloves, crushed
- 1 celery stick, finely chopped
- 1 large onion, finely chopped
- 2 tbsp sunflower oil

Cooking Instructions
- Gently cook the vegetables in the oil until soft but still pale. Stir in the garlic, then add the mince and increase the heat.
- Cook, stirring with a wooden spoon to break up the mince, until the meat changes colour.
- Add the remaining ingredients, stirring well. Reduce the heat, then simmer, uncovered, for 20 minutes or until the meat is tender. Season to taste.
- Serve the mince spooned over the split rolls.
