Coconut rice

Ingredients
- 2 cups basmati rice
- 400 ml coconut milk
- 3/4 cup water
- 1/4 tsp salt
- 1/2 cup dessicated coconut
- fresh coconut, shaved

Cooking Instructions
- Combine all the ingredients in a medium pot then place over medium heat.
- Allow the rice to come to a boil then simmer, covered, until all the liquid has been absorbed.
- Remove the pot from the heat then allow to steam for 15-20 minutes.
- Fluff the rice with a fork then serve topped with toasted coconut shavings.
