Steamed French beans with gremolata

Ingredients
- 5 ml olive oil
- 1.2 lemon, zested
- pinch black pepper
- sea salt
- 6 sprigs parsley
- 1 garlic clove
- 250 g sugar snaps
- 300 g peas
- 500 g french beans (finer beans are better)

Cooking Instructions
- For the gremolata: finely chop the garlic, lemon zest and parsley. Add the olive oil and combine well. Set aside until ready to use.
- Top and tail the French beans. If they are thin half them, if not leave whole. Top and tail the sugar snaps.
- Steam the beans and sugar snap peas until al dente.
- Steam the peas if using fresh. If using frozen peas briefly (3-5min) boil them in a bit of water, then strain and combine with beans and sugar snaps.
- Season with salt and pepper and toss the gremolata through.
- Serve hot as a vegetable side dish.
