Steamed French beans with gremolata

Ingredients

  • 5 ml olive oil
  • 1.2 lemon, zested
  • pinch black pepper
  • sea salt
  • 6 sprigs parsley
  • 1 garlic clove
  • 250 g sugar snaps
  • 300 g peas
  • 500 g french beans (finer beans are better)

Cooking Instructions

  1. For the gremolata: finely chop the garlic, lemon zest and parsley. Add the olive oil and combine well. Set aside until ready to use.
  2. Top and tail the French beans. If they are thin half them, if not leave whole. Top and tail the sugar snaps.
  3. Steam the beans and sugar snap peas until al dente.
  4. Steam the peas if using fresh.  If using frozen peas briefly (3-5min) boil them in a bit of water, then strain and combine with beans and sugar snaps.
  5. Season with salt and pepper and toss the gremolata through.
  6. Serve hot as a vegetable side dish.
