Corn, red pepper & red onion salsa

Ingredients
- pinch black pepper
- pinch sea salt
- olive oil
- 4 tbsp coriander, finely chopped
- 1/2 red onion, finely chopped
- 2 red peppers
- 3 ears corn

Cooking Instructions
- Steam the cob for 5 minutes and slice the kernels off the cob.
- Cut the peppers into squares the size of the corn.
- Combine the corn, peppers and red onion.
- Add the olive oil, coriander and seasoning.
- Mix well and refrigerate.
- Serve as an accompaniment to the Cajun sirloin.
