Corn, red pepper & red onion salsa

Ingredients

  • pinch black pepper
  • pinch sea salt
  • olive oil
  • 4 tbsp coriander, finely chopped
  • 1/2 red onion, finely chopped
  • 2 red peppers
  • 3 ears corn

Cooking Instructions

  1. Steam the cob for 5 minutes and slice the kernels off the cob.
  2. Cut the peppers into squares the size of the corn.
  3. Combine the corn, peppers and red onion.
  4. Add the olive oil, coriander and seasoning.
  5. Mix well and refrigerate.
  6. Serve as an accompaniment to the Cajun sirloin.
