Sticky pineapple on the braai

Ingredients

  • Madeira Loaf (optional)
  • Coconut oil
  • 3 limes, zested and juiced
  • 2 x 175 ml tubs of Woolworths Low Fat Vanilla Frozen Yoghurt
  • 3 T honey
  • 1 large pineapple, peeled and thinly sliced

Cooking Instructions

The season of the braai is upon us and what could be easier, or more delicious, than also making your dessert over the coals? This tasty dessert is a must-try and it’s giving us all the tropical feels.  

  1. Slice the madeira loaf cake, if using, in half lengthways. Cut of the rounded top to make an even surface. 
  2. Brush with butter or melted coconut oil and toast lightly over medium to low coals. 
  3. Place a fire-proof skillet over the coals with half of the pineapple slices and a good drizzle of honey. Squeeze over half of the lime juice and bring to a simmer. Toss fruit until evenly coated with honey. Cook for about 10–15 minutes until tender and sticky. Remove and repeat with remaining pineapple sliced. 
  4. Serve warm over sliced madeira loaf with a little scoop of vanilla frozen yoghurt and a sprinkle of lime zest.
