Thai Green Curry Chicken with Cauli Rice

Ingredients
- 1 T sesame oil
- Thai Green Curry paste
- medium rotisserie chicken, portioned into 4
- snacking tomatoes
- 400 ml coconut milk
- 1 cup chicken stock
- 1 T fish sauce
- 1 - 2 T Chilli Crisp
- 300 g Cauliflower rice
- Roti's for serving

Cooking Instructions
This is a great way to use a rotisserie chicken instead of traditional chicken pieces. Add any veg, such as baby corn and mangetout to bulk it up.
- Heat the oil in a frying pan. Add the curry paste and stir-fry for 1 minute.
- Add the chicken, tomatoes, coconut milk and stock. Simmer for 5 minutes. Season with fish sauce.
- Spoon the chilli crisp and cauliflower rice in a frying pan and heat through for 5 minutes. Serve alongside the curry with the rotis.
