Thai Green Curry Chicken with Cauli Rice

Ingredients

  • 1 T sesame oil
  • Thai Green Curry paste
  • medium rotisserie chicken, portioned into 4
  • snacking tomatoes
  • 400 ml coconut milk
  • 1 cup chicken stock
  • 1 T fish sauce
  • 1 - 2 T Chilli Crisp
  • 300 g Cauliflower rice
  • Roti's for serving

Cooking Instructions

This is a great way to use a rotisserie chicken instead of traditional chicken pieces. Add any veg, such as baby corn and mangetout to bulk it up.

  1. Heat the oil in a frying pan. Add the curry paste and stir-fry for 1 minute.
  2. Add the chicken, tomatoes, coconut milk and stock. Simmer for 5 minutes. Season with fish sauce.
  3. Spoon the chilli crisp and cauliflower rice in a frying pan and heat through for 5 minutes. Serve alongside the curry with the rotis.
