Ingredients

  • 180 g hummus
  • 1 T tahini
  • 2 T lemon juice
  • 3 T plain yoghurt
  • salt, to taste
  • 1 medium rotisserie chicken
  • 200 g Rice Vermicelli, cooked
  • 100 g asparagus, blanched
  • 100 g Tenderstem broccoli,blanched
  • 80 g mangetout
  • 100 g green beans, blanched
  • 50 g baby spinach, thinly sliced
  • 100 g edamame beans
  • 2 salad onions, thinly sliced
  • 1/2 cup Blue Elephant Lemongrass Dressing

For the hummus drizzle, mix:

  • 180 g hummus
  • 1 T tahini
  • 2 T lemon juice
  • 3 T plain yoghurt
  • salt, to taste

Mix the noodles and vegetables and serve with the chicken and hummus drizzle.
