Layered vegetable bake

Ingredients

  • 250 g Woolworths rainbow carrot spaghetti
  • 255 g easy to cook vegetable spaghetti
  • 100 g bread crumbs, toasted
  • 50 g parmesan, grated
  • 125 g fresh basil pesto
  • salt and freshly ground black pepper
  • 4 garlic cloves, finely grated
  • 125 g Woolworths roasted red pepper pesto
  • 2 cups beetroot powder
  • 235 g Easy to cook baby marrow and spinach

Cooking Instructions

  1. In a large oven proof dish add the rainbow carrots, then layer in the remaining vegetables.
  2. Mix together the red pepper pesto, garlic, seasoning and cream.
  3. Pour over the layered vegetables.
  4. Combine pesto, parmesan and breadcrumbs.
  5. Sprinkle over the vegetables.
  6. Bake at 180 for 35 – 40 minutes, until golden.
  7. Serve.
