Layered vegetable bake
Ingredients
- 250 g Woolworths rainbow carrot spaghetti
- 255 g easy to cook vegetable spaghetti
- 100 g bread crumbs, toasted
- 50 g parmesan, grated
- 125 g fresh basil pesto
- salt and freshly ground black pepper
- 4 garlic cloves, finely grated
- 125 g Woolworths roasted red pepper pesto
- 2 cups beetroot powder
- 235 g Easy to cook baby marrow and spinach

Cooking Instructions
- In a large oven proof dish add the rainbow carrots, then layer in the remaining vegetables.
- Mix together the red pepper pesto, garlic, seasoning and cream.
- Pour over the layered vegetables.
- Combine pesto, parmesan and breadcrumbs.
- Sprinkle over the vegetables.
- Bake at 180 for 35 – 40 minutes, until golden.
- Serve.
