Mushroom and Walnut Gnocchi

Ingredients

  • 500 g gnocchi
  • 100 g blue cheese
  • 2 cups cream
  • Sea salt and freshly ground black pepper
  • 2 tbsp fresh rosemary, finely chopped
  • 5 tbsp butter
  • 4 garlic cloves
  • 100 g walnuts, chopped
  • 350 g exotic mushrooms
  • 4 tbsp extra virgin olive oil

Cooking Instructions

  1. Heat the oil over a medium heat before adding the mushrooms and letting them simmer and brown without being disturbed for about 1-2 minutes.
  2. Toss the pan gently and cook for another minute before adding the walnuts, garlic, butter, rosemary and season. Cook for about 5 minutes or until fragrant and the garlic has cooked.
  3. Add the cream and reduce the heat to low. Crumble in the blue cheese and allow to melt through, season with extra black pepper.
  4. Cook the gnocchi as per the instructions.
  5. Heat the butter over a medium heat. Once the gnocchi is cooked add it to the melted butter and cook for about 2 minutes a side or until crisp and golden.
  6. Add the gnocchi to a serving dish and top with the mushroom sauce before serving.
