Mushroom and Walnut Gnocchi
Ingredients
- 500 g gnocchi
- 100 g blue cheese
- 2 cups cream
- Sea salt and freshly ground black pepper
- 2 tbsp fresh rosemary, finely chopped
- 5 tbsp butter
- 4 garlic cloves
- 100 g walnuts, chopped
- 350 g exotic mushrooms
- 4 tbsp extra virgin olive oil

Cooking Instructions
- Heat the oil over a medium heat before adding the mushrooms and letting them simmer and brown without being disturbed for about 1-2 minutes.
- Toss the pan gently and cook for another minute before adding the walnuts, garlic, butter, rosemary and season. Cook for about 5 minutes or until fragrant and the garlic has cooked.
- Add the cream and reduce the heat to low. Crumble in the blue cheese and allow to melt through, season with extra black pepper.
- Cook the gnocchi as per the instructions.
- Heat the butter over a medium heat. Once the gnocchi is cooked add it to the melted butter and cook for about 2 minutes a side or until crisp and golden.
- Add the gnocchi to a serving dish and top with the mushroom sauce before serving.
