Frikkadels with pap chips

Ingredients
- 1 lemon, zested and juiced
- 1 bunch swiss chard
- 5 Tbsp extra virgin olive oil
- 1 cup pap
- salt and freshly ground black pepper
- 2 Tbsp Butter
- 2 cups water

Cooking Instructions
900g Easy to cook free-range beef frikkadels
For the pap chips:
2 cups water
2Tbsp butter
Salt to taste
1 cup pap
3Tbsp extra virgin olive oil
For the lemony spinach:
2Tbsp extra virgin olive oil
1 bunch swiss chard, washed and roughly chopped, stalks included
4 garlic cloves, finely chopped
1 lemon, zested and juiced
Salt and freshly ground black pepper
- Prepare the frikkadels as instructed.
- For the pap chips: Bring the water to a simmer with the salt and butter before adding the pap and stirring to prevent any lumps.
After stiring for about 5 minutes the pap should become slightly thick. Pour it into a greased rectangle dish and place in the fridge to set.
Heat the oil over a medium heat. Turn the pap out and cut into chip like shapes before adding to the oil and cooking for about 1 minute a side to ensure they’re golden and crisp. - For the lemony spinach: Heat the oil over a medium heat before adding the swiss chard and wilting down. Add the garlic, lemon zest and juice and season with salt and freshly ground black pepper. After about 3 minutes the spinach should be ready, Serve with the frikkadels and pap chips.
