Rigatoni quattro formaggi

Ingredients

  • 500 g Streaky wood smoked bacon, roughly diced
  • Fresh basil pesto, to serve
  • 1 ball Fresh Fior Di Latte, drained and broken into small chunks
  • 250 g Mascarpone cheese, to serve
  • 75 g Gorgonzola cheese, rind removed and roughly broken into chunks
  • 75 g Parmigiano Reggiano cheese, freshly grated
  • 300 g Rigatoni pasta
  • 3 Tbsp olive oil, to drizzle
  • 125 g fresh basil pesto
  • freshly ground black pepper, to taste

Cooking Instructions

  1.  Cook the bacon under a hot grill until crispy.
  2.  Cut into bite-sized pieces.
  3.  Cook the rigatoni according to the pack instructions, then drain in a colander and reserve a little of the cooking water.
  4.  Heat the olive oil in a heavy-based frying pan, add the oregano and fry for a minute until starting to crisp up.
  5.  Add the cooked pasta, along with a couple of spoonfuls of the reserved cooking water, the Parmigiano Reggiano, Gorgonzola and mascarpone.
  6.  Toss over a medium heat and stir until most of the cheese has melted, adding a little more of the reserved cooking water if needed.
  7.  Add the bacon and basil pesto and season to taste.
  8.  Pour into a baking dish and top with the mozzarella and extra grated parmesan.
  9.  Place under a hot grill for a few minutes until the cheese has melted.
  10.  Serve garnished with fresh oregano leaves and freshly ground black pepper.
