Smoked salmon and trout terrine
Ingredients
- Woolworths smoked salmon and trout terrine, to serve
- Melba toast, to serve
- 1 tsp peppercorns
- 2 cardamom pods
- 3/4 cup castor sugar
- 4 tbsp red wine vinegar
- 1/2 small red onions, thinly sliced
- 3 beetroots, thinly sliced
- 3 radishes, thinly sliced

Cooking Instructions
- Combine the red wine vinegar, castor sugar, cardamom pods and peppercorns in a small saucepan.
- Simmer for 5 minutes.
- Pour in a jar over the radishes, beets and onions.
- Leave aside to cool.
- Do the same with white wine vinegar and baby cucumber.
- When cool, serve smoked salmon and trout terrine with melba toast and pickled veggies.
