Smoked salmon and trout terrine

Ingredients

  • Woolworths smoked salmon and trout terrine, to serve
  • Melba toast, to serve
  • 1 tsp peppercorns
  • 2 cardamom pods
  • 3/4 cup castor sugar
  • 4 tbsp red wine vinegar
  • 1/2 small red onions, thinly sliced
  • 3 beetroots, thinly sliced
  • 3 radishes, thinly sliced

Cooking Instructions

  1. Combine the red wine vinegar, castor sugar, cardamom pods and peppercorns in a small saucepan.
  2. Simmer for 5 minutes.
  3. Pour in a jar over the radishes, beets and onions.
  4. Leave aside to cool.
  5. Do the same with white wine vinegar and baby cucumber.
  6. When cool, serve smoked salmon and trout terrine with melba toast and pickled veggies.
