Marinated raw baby marrow

Ingredients

  • mint leaves, to serve
  • ricotta cheese, to serve
  • 50 g pitted green olives
  • 3 garlic clove, thinly sliced
  • organic olive oil, for drizzling
  • 4 Tbsp Dijon mustard
  • 1/2 fresh lemon leaves
  • 150 g baby marrows, grated

Cooking Instructions

  1. Run a vegetable peeler down 150 g baby marrows to make ribbons.
  2. Toss with 1 T fresh lemon juice, 1 t Dijon mustard, 3 T olive oil, 1 clove sliced garlic, 50 g pitted olives and season to taste.
  3. Serve with fresh ricotta and mint leaves.
