Sesame & chilli fried noodles with pork

Ingredients
- 1 ginger root, peeled and cut into julienne strips
- 400 g Hokkien noodles, soaked in water
- 5 ml sesame oil
- 2 cloves garlic, peeled and crushed
- 1 fresh red chilli, finely chopped for serving
- 2 spring onions, sliced for serving
- 2 tbls oyster sauce
- 2 1/2 tsp fish sauce
- sesame seeds, to garnish
- 1 1/2 Tbsp lime juice
- 60 g baby spinach
- 500 g pork fillet
- Dijon mustard, to taste
- 4 tbsp Butter

Cooking Instructions
For seared pork fillet
- Rub the fillet with mustard.
- Heat the butter in a saucepan and gently fry fillet until golden brown and cooked while turning on all sides.
For sesame and chilli fried noodles
- Strain the warm water from the noodles.
- Combine the remaining ingredients and pour into a wok.
- Heat until warm and gently toss the noodles until heated through.
- Add the baby spinach and toss through gently.
- Remove and keep warm in serving bowls.
For the deep fried ginger
- Deep-fry ginger in hot oil until golden brown.
- Place on paper towel and use as garnish and a crispy texture to your dish.
