Mexican Meatball Bowl

Ingredients

  • 400 g Italian diced tomato with herbs
  • 600 g Beef and lamb frikkadels
  • 4 pack Supersweet sweetcorn
  • 400 g Three bean mix in brine
  • 250 g Brown basmati rice, cooked
  • 1 Tbsp Olive oil

Cooking Instructions

  1. Break or cut your meatballs into bite-sized chunks, we like to quarter them.
  2. Cut the sweetcorn off the cob and set aside
  3. Heat up your pan on high, then add 1 tablespoon of olive oil
  4. Add your meatballs to the pan and sizzle for 5 minutes, then remove from the heat
  5. Add the sweetcorn to the pan and cook for 2 minutes, or until it starts to blacken
  6. Put the meatballs back into the pan with the sweetcorn
  7. Add the canned tomato and drained beans, and cook for 5 minutes
  8. Add your cooked rice to the mixture, then stir and cook for a further 2 minutes or until heated through.
