Prawn, lemon and chilli linguini

Ingredients

  • 1 tbsp olive oil
  • 4 spring onions, sliced
  • 1 red chilli, sliced
  • 2 cloves garlic, finely chopped
  • 400 g shelled prawns
  • 250 ml fresh cream
  • 1 cup fresh or frozen peas
  • 300 g linguini pasta, boiled till al dente
  • 1 lemon, zested and juiced
  • 4 tbsp parsley, chopped
  • salt and pepper

Cooking Instructions

  1. Heat oil in a pan then sauté spring onions until tender.
  2. Add chilli, garlic and prawns, then saute until prawns are browned. 
  3. Add cream, peas and season then leave to simmer gently for 2 minutes.
  4. Toss in the pasta, lemon zest, juice and parsley.
  5. Serve immediately.
