White chocolate mousse with berries

Ingredients

  • 250 g good-quality white chocolate, broken into blocks
  • 1/2 vanilla pod
  • 500 ml fresh cream
  • 100g strawberries, washed, hulled and sliced
  • 3 x 125 g fresh blueberries
  • 1 crunchy granola bar crushed, to serve

Cooking Instructions

  1. Break the chocolate into pieces and place in a heatproof bowl along with the vanilla seeds and 3 Tbsp of cream.
  2. Melt over a saucepan of barely simmering water.
  3. Whip the remaining cream until soft peaks form.
  4. Allow the chocolate mixture to cool slightly before folding in the whipped cream, a little at a time.
  5. Spoon into glasses and chill until ready to serve.
  6. Serve with summer berries and crushed crunchy granola.
