White chocolate mousse with berries

Ingredients
- 250 g good-quality white chocolate, broken into blocks
- 1/2 vanilla pod
- 500 ml fresh cream
- 100g strawberries, washed, hulled and sliced
- 3 x 125 g fresh blueberries
- 1 crunchy granola bar crushed, to serve

Cooking Instructions
- Break the chocolate into pieces and place in a heatproof bowl along with the vanilla seeds and 3 Tbsp of cream.
- Melt over a saucepan of barely simmering water.
- Whip the remaining cream until soft peaks form.
- Allow the chocolate mixture to cool slightly before folding in the whipped cream, a little at a time.
- Spoon into glasses and chill until ready to serve.
- Serve with summer berries and crushed crunchy granola.
