Potato, feta and sausage frittata

Ingredients

  • 7 extra-large eggs
  • salt
  • pepper, milled
  • 2 Tbsp avocado oil
  • 1/2 cup onion, sliced
  • 2 large potatoes, cooked, peeled and chopped into chunks
  • 3 pork sausages, cooked and chopped roughly into chunks
  • 1 disc feta cheese, cubed
  • 100g plain guacamole

Cooking Instructions

  1. Pre-heat the grill.
  2. Whisk the eggs and set aside.
  3. Heat the avocado oil in a 20cm non-stick, ovenproof pan and sauté the onion until caramelised.
  4. Add the potatoes and cook to heat through.
  5. Add the sausages and cook for another minute.
  6. Increase the heat and pour in the egg mixture. Cook for another 4 to 5 minutes, or until mixture is nearly set.
  7. Scatter over the feta and dot with guacamole.
  8. Grill for 4 to 5 minutes, or until the egg mixture has set and the top is golden.
