Potato, feta and sausage frittata

Ingredients
- 7 extra-large eggs
- salt
- pepper, milled
- 2 Tbsp avocado oil
- 1/2 cup onion, sliced
- 2 large potatoes, cooked, peeled and chopped into chunks
- 3 pork sausages, cooked and chopped roughly into chunks
- 1 disc feta cheese, cubed
- 100g plain guacamole

Cooking Instructions
- Pre-heat the grill.
- Whisk the eggs and set aside.
- Heat the avocado oil in a 20cm non-stick, ovenproof pan and sauté the onion until caramelised.
- Add the potatoes and cook to heat through.
- Add the sausages and cook for another minute.
- Increase the heat and pour in the egg mixture. Cook for another 4 to 5 minutes, or until mixture is nearly set.
- Scatter over the feta and dot with guacamole.
- Grill for 4 to 5 minutes, or until the egg mixture has set and the top is golden.
