Cooking Instructions
- Cut the cauliflower into 4 thick steaks, making sure to cut through the core of the cauliflower with each slice so that it stays intact.
- Mix together the turmeric, paprika, coriander, ginger, salt, pepper and olive oil.
- Brush the cauliflower steaks generously with the spicy mixture, then grill over medium coals until the cauliflower is tender.
- Place the peppers, tomatoes and red onions onto the braai and cook until charred and blackened.
- Once charred, place the peppers into a plastic bag, then leave to steam before scraping off the charred skin and deseeding. Slice peppers into strips then place into a bowl.
- Pick the charred tomatoes off the vine, then add to the peppers along with the onions, olive oil, seasoning, basil, balsamic and capers.
- Serve the cauliflower steaks topped with the charred tomato and peppers and a dollop of crème fraiche.
