Crispy artichoke fritters

Ingredients

  • 2 x 250 g tubs Woolworths Full Cream Smooth Cottage Cheese
  • 2 x 280 g jars Grilled Artichokes with Herbs in Sunflower Oil, drained and roughly chopped
  • sunflower oil, for deep-frying
  • 2 cups panko breadcrumbs
  • 6 extra large free range eggs
  • 240 g Flour
  • 6 Tbsp parsley, chopped
  • 50 g Grana Padano, finely grated
  • 4 garlic cloves, finely chopped
  • 1 lemon, zested, plus extra for squeezing

Cooking Instructions

  1. Mix the artichokes, cottage cheese, lemon zest, garlic, Grana Padano and parsley.
  2. Shape 1 T of the mixture into a ball and roll in the flour, then dip into the egg and the panko crumbs. Repeat with the remaining mixture.
  3. Heat the oil, then fry each fritter for 30 seconds each, or until golden and crisp. Drain on kitchen paper. Serve hot with a squeeze of lemon juice.
