Spice-roasted butternut

Ingredients

  • 500 g butternut
  • 3 Tbsp olive oil, to drizzle
  • 2 tsp ground cumin
  • 2 ml turmeric
  • 2 tsp smoked paprika
  • 1\4 tsp chilli powder
  • 1/4 tsp salt
  • 2 sprigs fresh rosemary, to garnish
  • 1 fresh chillies,sliced

Cooking Instructions

  1. Pre-heat the oven to 200°c.
  2. Halve the butternut then remove the seeds. Slice the butternut into large chunks/slices. (You can peel the butternut if you’d like but the roasted skin becomes soft and a little chewy when cooked.)
  3. Toss the butternut with the oil and all the spices, salt and rosemary then transfer to an oven-proof dish.
  4. Place in the oven and bake for 30-35 minutes until the butternut is cooked through and golden brown.
  5. Remove from the oven, garnish with fresh chilli and serve.
