Caramelised rainbow carrots

Ingredients

  • 4 tbsp maple syrup
  • 1 cup pecan nuts
  • 1 orange, zested and juiced
  • Sea salt and freshly ground black pepper
  • a small handful fresh Italian parsley
  • 2 tbsp olive oil
  • 400 g sweet potatoes, cleaned, skin on and cut into thin wedges
  • 400 g rainbow carrots, cleaned, skin and tops on

Cooking Instructions

  1. Preheat the oven to 180 °C.
  2. Place the carrots and sweet potato wedges in a large roasting tray.
  3. Drizzle with the olive oil, top with most of the parsley, season with salt and pepper and roast for 30 minutes.
  4. Top the vegetables with the orange juice and zest, maple syrup and pecan nuts and roast for 10 minutes until caramelised.
  5. Sprinkle with the rest of the chopped parsley and serve.
