Pineapple-and-ginger zing

Ingredients
- 1 lemon sliced, to garnish
- 8 fresh figs, sliced
- 6 strawberries, washed, hulled and sliced
- A handful torn fresh mint leaves
- 4-5 cups soda water
- 1 orange, zested
- kiwi fruit, for garnishing
- 2 cups crushed ice
- 2-4 Tbsp fresh ginger, juiced
- 1/4 cup orange juice
- 3 cups pineapple, freshly squeezed from 8-10 pineapples

Cooking Instructions
- Pour the pineapple, orange, ginger and lemon juices into a jug and mix.
- Place the ice, kiwi and orange in small glasses and fill with the juice until two-thirds full.
- Top with the soda water and garnish with the mint, strawberries and figs.
