Black rice and mango pilau

Ingredients

  • 250 g Woolworths Blue elephant thai black rice
  • sea salt and freshly ground pepper, to taste
  • extra virgin olive oil, plus extra for drizzling
  • 1 lemon, cut into 8 slices for garnishing
  • pistachios
  • 5 Spring onions, sliced julienne
  • 6 leaves spinach, finely sliced
  • A handful fresh mint, to serve
  • 3 beetroots, thinly sliced
  • 50 g Dried mango strips, shredded

Cooking Instructions

  1. Place the rice in a saucepan and cover with salted water, bring to the boil, then reduce the heat and simmer for 30 minutes or until tender. Drain and set aside to cool.
  2. Toss the remaining ingredients with the black rice.
