Black rice and mango pilau

Ingredients
- 250 g Woolworths Blue elephant thai black rice
- sea salt and freshly ground pepper, to taste
- extra virgin olive oil, plus extra for drizzling
- 1 lemon, cut into 8 slices for garnishing
- pistachios
- 5 Spring onions, sliced julienne
- 6 leaves spinach, finely sliced
- A handful fresh mint, to serve
- 3 beetroots, thinly sliced
- 50 g Dried mango strips, shredded

Cooking Instructions
- Place the rice in a saucepan and cover with salted water, bring to the boil, then reduce the heat and simmer for 30 minutes or until tender. Drain and set aside to cool.
- Toss the remaining ingredients with the black rice.
