Ingredients
- Pop Chips, your favourite flavour
- 6 wholewheat mini rolls
- 150 g Rainbow Slaw
- Juice of half a lemon
- 1 T olive oil
- Sea salt and freshly ground black pepper
- 360 g hummus
- 180 g snack pot fruit tubs (watermelon)
- Seasonal fruit like stone fruit and strawberries
- 200 g baby cucumbers
- 200 g baby carrots

Cooking Instructions
It IS possible to go to the beach – or to lounge by the pool – without ending the day high on sugar and dehydrated from all those salty snacks hey … Try this vibrant, colourful collection of summer snacks is a total treat.
- Prepare the rolls by slicing in half. Spread with some hummus.
- Toss the ruby slaw with olive oil, lemon juice and season to taste for an instant no-wilt salad.
- Divide the slaw between rolls and serve with Woolworths Popped Chips on the side.
- Use the rest of the hummus to use as a dip for your baby cucumber and carrots.
(TIP: To keep your veggies fresh while travelling, simply dampen a kitchen towel and lay in between layers of your veggies in a tupperware and cover to keep fresh and from drying out.)
