Grilled halloumi cheese with honey

Ingredients
- 400 g bella tomatoes, halved lengthwise
- 1 medium red onion, sliced thinly
- 150 g pitted olives
- 400 g Halloumi cheese, cut lengthwise into thick slices
- 1 lemon, zested and juiced
- a small handful fresh thyme, leaves removed and finely chopped
- 5 tbsp honey
- 5 tbsp extra virgin olive oil

Cooking Instructions
- In a wide, open bowl, mix the oil, honey, thyme, lemon zest and juice until well blended.
- Add the halloumi cheese and set aside to marinate for 15 minutes or overnight in the fridge.
- Heat a grill pan over a medium-high heat.
- Grill the halloumi cheese for 1 – 2 minutes per side or until browned and bubbling.
- Serve immediately sprinkled with olives, Bella tomatoes and red onion slices, and drizzled with any leftover marinade.
