Indonesian pork skewers

Ingredients

  • 8 wooden skewers, soaked in water
  • 800 g pork steaks, cut into 16 medallions
  • 3/4 cup condensed milk
  • 2 ml turmeric
  • 2 tbsp curry powder
  • 3/4 tsp finely ground white pepper
  • 1/2 tsp salt
  • 2 tbsp White sugar
  • 2 tbsp soya sauce
  • 2 tbsp fish sauce
  • 125 ml coconut milk

Cooking Instructions

  1. In a medium saucepan, bring the coconut milk, fish sauce, soya sauce, sugar, salt, pepper, curry powder and turmeric to a boil, stirring occasionally.
  2. Reduce the heat and simmer for about 10 – 15 minutes.
  3. Transfer the sauce to a large bowl and allow to cool, then stir in the condensed milk. Season with salt and white pepper.
  4. Add the pork medallions to the sauce and toss, massaging the meat with your hands. Cover and chill for 1 hour.
  5. Prepare the grill on a medium to high heat.
  6. Drain the pork and thread the medallions onto the skewers.
  7. Cook the pork skewers on the braai or under a grill for about 5 – 8 minutes, turning occasionally, until lightly charred and cooked through.
