Soft boiled eggs with ham

Ingredients

  • salt and black pepper
  • 4 tbsp parmesan cheese, grated
  • 70 g Woolworths Serrano ham
  • 100 g Woolworths all-butter puff pastry
  • 200 g Woolworths asparagus
  • 8 Woolworths free range eggs, at room temperature

Cooking Instructions

  1. Bring a large pot of water to a rapid boil, preheat the oven to 200°C.
  2. Gently lower the eggs into the water, turn heat down to a simmer, then leave eggs to cook for 5 minutes.
  3. Cut each piece of ham in half lengthways, then wrap around each asparagus spears.
  4. Slice the pastry into 5mm thin slices then wrap loosely in a spiral over the ham and asparagus.
  5. Place onto a greased baking tray then sprinkle with parmesan cheese and black pepper.
  6. Bake for 15 minutes until the pastry is crisp and golden.
  7. Place the eggs into cups, cut off the tops, season with salt and pepper then dunk the soldiers in and enjoy!
