Seared steak

Ingredients
- salt and freshly ground black pepper
- 2 x 150 g Rib-eye steaks
- 120 g Wild rocket, stems removed
- 120 g Caper berries, rinsed
- 2 Tbsp extra virgin olive oil, plus extra for drizzling
- 2 Tbsp lemon, juiced
- 2 tbsp parsley, chopped
- 1/4 cup Parmesan, shaved
- 1/2 small red onions, thinly sliced

Cooking Instructions
- Preheat the grill to a medium-high heat.
- Season the steaks with salt and black pepper.
- Grill the steaks, turning several times, until lightly charred. Grill for 7 – 9 minutes for medium-rare.
- Transfer to a cutting board and rest for at least 15 minutes before slicing thinly.
- For the salad, toss the rocket, onion, caper berries or capers, Parmesan and parsley in a bowl, drizzle with lemon juice and oil and toss to coat. Season with salt and pepper.
- Drizzle the steak with olive oil and serve with the salad.
