Seared steak

Ingredients

  • salt and freshly ground black pepper
  • 2 x 150 g Rib-eye steaks
  • 120 g Wild rocket, stems removed
  • 120 g Caper berries, rinsed
  • 2 Tbsp extra virgin olive oil, plus extra for drizzling
  • 2 Tbsp lemon, juiced
  • 2 tbsp parsley, chopped
  • 1/4 cup Parmesan, shaved
  • 1/2 small red onions, thinly sliced

Cooking Instructions

  1. Preheat the grill to a medium-high heat.
  2. Season the steaks with salt and black pepper.
  3. Grill the steaks, turning several times, until lightly charred. Grill for 7 – 9 minutes for medium-rare.
  4. Transfer to a cutting board and rest for at least 15 minutes before slicing thinly.
  5. For the salad, toss the rocket, onion, caper berries or capers, Parmesan and parsley in a bowl, drizzle with lemon juice and oil and toss to coat. Season with salt and pepper.
  6. Drizzle the steak with olive oil and serve with the salad.
