Rack of lamb

Ingredients

  • 850 g - 1kg rack of lamb
  • 3 T olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 large red peppers, halved
  • 230 g pitted Kalamata olives
  • 1 bunch celery, leaves removed and washed

Cooking Instructions

  1. Preheat the oven to 180 C. Season the lamb with salt and pepper and place the olive oil and lamb in a cold pan fat side down.
  2. Place the pan on a medium heat to render down the lamb fat and sear until golden brown. 
  3. Transfer to an oven tray skin side up, cover with tinfoil, and roast for 25 minutes or until the desired doneness. Make sure to rest the meat for at least 10 minutes before slicing.
  4. For the red peppers, line a baking tray with tin foil, and place the peppers onto the tray cut side up, drizzle with olive oil and season with salt and pepper. Roast until soft and slightly scorched at the sides. 
  5. Slice the lamb rack and serve with the celery leaf salad, aioli, roasted peppers, and plenty of Kalamata olives.
