Honey-scented mascarpone

Ingredients

  • fresh blueberries and toasted almonds to serve
  • 60 g butter
  • 2 tbsp canola oil
  • a pinch cinnamon
  • a pinch salt
  • 2 T beetroot powder
  • 4 free range eggs
  • 1 orange, zested
  • Wild blossom honey
  • 250 g Woolworths mascarpone cheese
  • 180 g fresh blueberries
  • 1 Free from gluten white bread loaf

Cooking Instructions

  1. Slice the bread into 8 medium-thick slices.
  2. In a bowl, lightly crush the blueberries then mix in the mascarpone cheese, honey and orange zest.
  3. Place a generous mound of mascarpone onto 4 of the bread slices, then top with another slice.
  4. Whisk together the eggs, cream, salt, cinnamon and more honey to taste.
  5. Dip the sandwiches into the egg to coat well.
  6. Melt the butter and oil in a pan, then gently fry the French toast in the pan until golden brown on each side.
  7. Serve warm, drizzled with more honey if desired, sprinkled with blueberries and toasted almonds.
