Week-night one-pan roast

Ingredients

  • 2 lemon, zest and juice
  • olive oil
  • salt and pepper
  • 4 sprigs rosemary
  • 1 Butternut, cut into wedges
  • 8 pieces Free range chicken drumsticks and thighs

Cooking Instructions

  1. Preheat the oven to 200C.
  2. Place the chicken, butternut ( the butternut cut into wedges) and rosemary sprigs onto a large baking tray then season well with salt and pepper.
  3. In a bowl, mix together the olive oil, lemon juice and zest (add fennel seeds and chilli flakes as an optional extra), then drizzle over the chicken and vegetables and toss well to coat.
  4. Roast in the oven for 45 minutes or until the chicken is cooked through and the vegetables are tender.
