Bulgur Wheat Flapjacks

Ingredients

  • 1 cup bulgur wheat, soaked and loosened
  • 240 g self-raising flour
  • 8 free-range egg yolks
  • 375 ml 1,5 L milk
  • 1/2 cup brown or treacle sugar
  • 5 Tbsp Butter
  • maple syrup, for drizzling
  • fresh fruit of your choice (banana, guava etc.), for serving

Cooking Instructions

  1. Combine the flour, egg and milk, until smooth. Add the sugar and bulgur wheat, and combine. The batter should be thick and slightly runny.
  2. Add more flour or liquid if necessary. Heat a large, Teflon-coated pan until warm then add a little butter. Turn down the heat.
  3. Add large spoonfuls of the batter and cook the flapjacks, two or three at a time, until golden brown on both sides.
  4. Serve warm with maple syrup and fresh fruit.
